Preparing a Meal

Campus Kitchen

What We Do

Launched in October 2003, the Campus Kitchen at Augsburg is a unique partnership between Augsburg College, The Campus Kitchens Project, Augsburg Dining Services, and local community agencies. We are one of 12 Campus Kitchens around the country. Our goal is to use food donations from campus dining operations in the preparation of meals that are delivered to community service agencies. Our partnerships are mainly located in the Cedar-Riverside and Phillips neighborhoods of Minneapolis.

The mission of The Campus Kitchens Project is to use service as a way to:

  • Strengthen Bodies by using existing resources to meet hunger and nutritional needs in our communities
  • Empower Minds by providing leadership and service-learning opportunities to college students, and educational benefits to adults, seniors, children, and families in need
  • Build Communities by fostering a new generation of community-minded adults through resourceful and mutually beneficial partnerships among students, social service agencies, businesses, and universities

How We Work

  • The Campus Kitchen at Augsburg is part of the Center for Service, Work and Learning, and all the meal preparation takes place in Augsburg's dining services kitchen.
  • Volunteers prepare meals using food donated from campus dining halls, local food banks, and local farms and community gardens. Some of this meal preparation is cooking food from scratch, and some of it is finishing up and packaging already prepared dishes.
  • Then, volunteers deliver meals free of charge to individuals and agencies in Augsburg's neighborhood. The meals go to after school programs, homeless shelters, elderly and disabled individuals, and low-income people. Along with a meal, Campus Kitchen volunteers bring conversation and companionship.
  • Student volunteers also provide empowerment-based education to clients, such as nutrition education to children, healthy cooking classes to families, and programs in the upcoming Augsburg Community Garden.

Internships for Students

The Campus Kitchen at Augsburg offers paid internships to students each semester and over the summer. Interns oversee daily operations, plan special events, recruit and manage volunteers, teach nutrition education, and create new, sustainable projects for the Campus Kitchen. If you are interested in an internship with the Campus Kitchen at Augsburg, contact the Campus Kitchen Coordinator at (612) 330-1624 or campuskitchen@augsburg.edu.

National Network

The Campus Kitchens Project (CKP) is the national organization that creates and oversees Campus Kitchens at schools across the country. What The Campus Kitchens Project does is kind of a "no-brainer." We know there are people in each community who need nourishing meals. And, we know that every college campus has unserved food in its dining halls and brilliant students in its classrooms. So we put them all together. We empower thousands of students each year to recycle food from their cafeterias, turn these donations into nourishing meals, and deliver those meals (along with a friendly visit) to those who need it most in communities across the country. Then, they open up that on-campus kitchen space to teach nutrition and culinary skills to members of the community, who in turn teach the college students a thing or two about poverty, stereotypes, and what it takes to make it these days.
