Overview
This immersion invites you to evaluate the principles of the Slow Food and Slow Medicine movements and their impact on population health. We will focus on how sustainable practices promote holistic well-being, ecological harmony, and patient-centered care as we explore the following:
• Join a walking tour of the Castello Sonnino to learn about the working farm, its history and its significance to the region
• Learn about the slow food movement and visit a farm using regenerative practices to grow vegetables
• Participate in an Italian cooking class led by a food expert and journalist, using organic ingredients purchased at a local farmers market
• Take a guided tour of one of the world’s top art museums – the Uffizi, focusing on the health and sickness in the artwork
• Visit the local mill and learn about ancient grain production, milling, and the mill’s work with local hospitals on health initiatives
• Tour the medieval town of Siena with a local guide and learn about the role of the plague, public health, and modernization of historic city centers
